Well, I think it's just another form of play at a party that is visual.  People are voyeurs by nature and it isn't really about being into it yourself, it's more like it's part of voyeurism. Having said that, it's also a turn on for some people to watch people in a sexual situation, no matter what that situation is, but especially if it's taboo. However, people will watch someone being flogged or whipped for the same reason. You could be thinking, "But Mistress, that's someone's ass hole." Yep, but it really is just another orifice to fuck."
A kink party has essentially kinky people in general attending, I do think it turns people on just like watching two people have sex does. I think you may be separating the act of anal play itself, from something that turns you on more. Why would anyone want to watch someone get rogered in the arse with a strap-on?
